Vegan Scrambled Eggs and Bacon

One of the most prevalent questions I get asked is how to become a vegan and what is an easy recipe. This is it! This is the easiest transition meal for anyone interested in becoming vegan and it tastes just eggs and turkey bacon! Try it today and let me know what you think.


1 container of Organic Medium-Firm Tofu

1/2 cup chopped onion

3 slices of Smart Vegan Bacon Strips

1 tbsp Olive Oil

6 tbsp Tumeric

3 tbsp Rosemary

1 tbsp Garlic Powder

1 tbsp Onion Powder

2 tbsp Garlic Salt

2 tbsp Ground Black Pepper

1 roll Whole Wheat Ciabatta Bread

(Optional: 1/2 cup Daiya Dairy-Free Mozerella)

Meal Prep:

First, you need to make your scrambled eggs and it is easier than you think, you just want to drain the tofu, and then expel extra water from the tofu by wrapping it up in paper towels and pressing it. Next, you want to mash together the tofu, and all the seasonings together in a bowl with a fork. You want to break down the tofu and incorporate all the seasonings throughout it.


Put olive oil in a medium-sized saucepan on medium heat. Add your chopped onion and saute until soft and brown. Next, add a serving of your tofu eggs into the pan (roughly 2-3 scoops). Saute eggs, flipping it over after 10 minutes to brown tofu and add a crispy outside. Move eggs to the side of the pan (top with cheese) and place three bacon strips on the pan. Bacon will take 5 minutes on each side until it's done. After the bacon is finished, toast bread and make a sandwich.
